Wai Shan Xiao Zhong is a good everyday rock red tea. Small black leaf tendrils produce a juicy reddish-brown infusion with a golden edge.

The aroma is smoky, sweet with bread and berry sourness. The palette is quite wide: honey, baked goods, bread crust, dark chocolate, burnt sugar, cherries, dried plums, dried apricots and suddenly the smell of a campfire. The tea is roughly heated, which makes the smoke intrusive and causes a feeling of dryness in the mouth.

How to brew

Steaming

  • Teaware: clay or ceramic teapot
  • Water: 90-95°C
  • Ratio of dry tea leaves: 6-7 g per 100 ml water

Brew in short infusions of 10-15 seconds, gradually increasing the time by 5-10 seconds.
The flavor remains consistent over 7-8 infusions.
