Blue tea Anchan (Clitoria ternatea), AA, 2025
Brewed Thai blue tea (anchan) gives a beautiful infusion of light blue color. The aroma of the drink is quite specific, with notes of corn and green peas. It pairs well with lemon, honey, lavender or rose.
Blue tea made from the flowers of Clitoria ternatea. They are grown, harvested and dried in the sun in ecologically clean areas of Thailand. The flowers have a rich blue colour and transfer it to the finished drink.
Infusion of anchan flowers have a number of beneficial properties. The tea improves eyesight, boosts immunity, improves skin and hair, has a calming effect.
As an additive, it is combined with lemongrass, lime, bergamot. The finished infusion of anchan has the flavour of vegetable broth made from broccoli, potatoes and corn. When sour fruits are added, the infusion takes on a purple colour.
How to brew:
1 teaspoon of flowers for 250-300 ml of water
Water temperature: 90-95°C
Brewing time: 5 minutes
