Aged Taiwan tea brick, 1995 harvest.

250 g of medium density tea bricks, broken effortlessly with fingers into large, longitudinally twisted brown leaves and buds with thin stems. The aroma is mature and woody. The infusion is clear, with a dark amber color.

The brewed tea has a mature, diverse bouquet with notes of old, dry wood and aromatic herbs, hazelnuts, dried plums and apples. The aroma is deep and complex, fruity. The taste is rich and smooth, sweet, with a slight tartness and light fruity acidity, developing into a lingering finish.

Brew the tea with hot water (95°C) in a gaiwan or a teapot made of porous clay. The proportion is 5 g per 100 ml. The first steeping time is about 5 seconds. Then make short steeps (for 1-2 seconds only), increasing the steeping time with each successive step, if necessary. The tea can be brewed up to 12 times.
