Ivan Chai is an acquired taste, but if you are, it's a wonderful choice for a mug, teapot, or thermos for a walk in the park or forest. The herbaceous, floral aftertaste lingers on the tongue, and the infusion is refreshing and thirst-quenching. Although similar to red tea, Ivan tea is caffeine-free, so you can drink as much as you like at any time of day.
Fermented Ivan Chai (Chamaenerion angustifolium, willowherb angustifolia) brews very differently from simply dried Ivan Chai. Fermentation, similar to Chinese red tea (withering, twisting, drying, and roasting), darkens the infusion and imparts a character vaguely reminiscent of true red tea, but with distinctive flavor nuances.
Ivan Chai "Ozerny" has a very traditional appearance: large, brownish-green leaves, twisted and well-dried. They exude a distinct scent of forest and medicinal herbs, with a hint of lemon tartness in the background.
Ivan Chai infusion is brownish-yellowish, with a slight red tint. The flavor is chamomile-like and tart, with a hint of citrus tartness, and hints of honey and fresh wild berries.
