Shui Xian - Water Immortal - is an oolong from the city of Wuyishan in Fujian province. The tea was hand-harvested and then subjected to classical processing (drying, shaking, fermenting, twisting, shaking, heating) and heated three times over charcoal.
The aroma is rich and multifaceted, with notes of dried fruits, flowers, honey, chocolate and smoke. The brew has a golden color. The taste is balanced, tart, dense and sweet, with notes of chocolate, dried berries and floral accents. Smoky and nutty notes appear in subsequent infusions.
The tea gently stimulates and restores balance to the mind. Perfect as an evening tea to relax after a hard day.
