We take 90-95°C water and transport it to a pine forest near a wet country barn. Fresh pine needles, sweet wet wood, raspberry twigs and smoke from an old stove. The texture is soft. The aftertaste is short, herbal and pharmaceutical. Instead of refreshing, it awakens a hidden source of energy in the body, like so much hei cha!
The water is 80-85°C, and Grandma's cellar opens with berries, dried fruits and medicinal herbs. Still the same soft, velvety brew, but even more relaxed. If the previous paragraph is a hike in the woods, this one is a pleasant rest on the veranda.
