Purple Pu Erh is prepared from the leaves of the same tea tree Camellia Sinensis var. Assamica as the regular Sheng Puer, but leaves with a purple color are used. Anthocyanin pigments are responsible for such unusual leaf color, which are synthesized by the plant along with chlorophyll through natural mutation. Purple Sheng Pu Erh is very mild in taste, delicate and sweet, and there is virtually no bitterness.
The dry tea is pressed into a loose plate. When warmed with the breath, there is a noticeable sweetness of candied fruits. The infusion has a deep, rich copper color, with a slight acidity and smokiness on the palate. You can smell jasmine, melon, dates and dried fruits. A strong brew becomes tart, more acidic, refreshing.
