Georgian tea, whose ancestor is kimun (qihun), was fermented anaerobically. A good friend of ours did so and it came out quite interesting.
The thin, dark leaf resembles the black tea known in our latitudes. When warmed by breathing, the aroma of honeycomb and dried berries. Pure infusion with an orange-gold color. Rich flavor with round, sweet and sour varieties of dried fruits, berries, honey with gingerbread, Laotian bergamot. An extraordinary GABA tea that gives gastronomic pleasure, energy, a calm and clear mind, a relaxed but not sluggish body.
